This fleeting rosé is a testament to the permanent human desire to drink wine. Begun in 996 by the Benedictines, Apátsági was closed by the government after WWII. After Communism fell, the monks went back to making wine. Hand-harvested and vinified in a gravity-fed winery, this pretty, refined pink starts with roses on the nose (red, pink, & a touch of yellow), moves smoothly on to watermelon, strawberry, and red apple in the mouth, and finishes with flourish of acidity. Supple in the mouth, this is a classic Park rosé, perfect for fruit and cheese or salads.
