Limestone and Clay are what make Chablis wines unique, and that marine-fossil soil creates a bright minerality that has delighted wine drinkers for centuries. A family property since 1887, Colombier makes a Villages-level wine from up to 50 year-old fines, and is worthy of distinction. From its classic nose of tree-fruit and white-pepper, to it’s full-flavored palate of clean acidity; this wine is delicious. Pair it with snails or prawns in garlic butter, Gougères and other cheesy nibbles, and almost any dish with a strong, mustard-based sauce.
