NOTES: One of only two crus on the west bank of the southern Rhône, Tavel is famous for it’s rosé—indeed, it is the only sort of wine that can be made there. Intensely flavored and full-bodied, this rosé has spent a bit of time in the bottle and therefore developed a complex savory quality that is positively delicious. Pair this with beautiful seafood and vegetable dishes like an octopus salad, bouillabaisse, or ratatouille.
VARIETY: 60% Grenache, 20% Cinsault, 10% Carignan, & 10% Mourvedre, Picpoul, and Syrah
