Just south of Barcelona, the Penedès region is one of Spain’s most important in producing their Champagne-style sparkling wine, Cava. And here we have the “best of the best.” Gran Reserva Cava uses grapes from only a single, exceptional vintage (2008 was splendid!) and is aged for four years (six months in oak barrels). This cava takes on earthy notes mixed with the sumptuous quality we associate with truly beautiful bubbly. Pair this as a dry antidote to all of your sweet apple, almond, and nutty desserts—and say Olé!
