Valpolicella Ripasso is when the fermented juice for a basic Valpolicella is repassed with the unpressed skins from Amarone. This refermentation adds tannins and complexity; and creates a smooth, elegant wine with dark red fruits (especially plum) along with some tasty cinnamon.
