We could spend all day drinking this zippy, mineral-driven, and superb Sauvignon Blanc (although we would probably get fired…… but it would be worth it). Bone-dry, with chalky minerality, lime pith, chamomile, and under-ripe apricots, it makes your palate sit up and pay attention! Pair with arugula salad with goat cheese, flounder dusted with panko, and shrimp tacos with cilantro and guacamole!
