  • NOTES: Amarone is truly one of the great wines of Italy! North of Verona in the Classico zone of Valpolicella (where all of the best vineyards are located) is where the passito tradition began. Here, grapes are left on mats for months to dry and raisin in the sun. The resulting wine is intensely flavored with rich notes of chocolate, plum, and leather; and in the mouth, a spicy red-fruit jam palate finishes in tobacco and dried fruit. As for food, Amarone with braised short-ribs is an iconic match, but just as delicious is Parmigiano cheese with honey!
